Caviar is a luxury delicacy made from the eggs of sturgeon, a freshwater fish. These eggs, also called "grains", are surgically extracted from the female sturgeon. Caviar roe varies in size, color and flavor depending on the species of sturgeon. The most prized varieties of caviar often come from wild sturgeon, although captive breeding of sturgeon is also common.
Due to the depletion of wild sturgeon and the high demand for caviar, there are concerns related to the conservation of these fish and the sustainability of the caviar industry. Some producers have turned to sturgeon farming to meet demand while helping to preserve wild sturgeon populations.
